Worlds Best Santa Maria Style BBQ Tri-Tip - Java Moto Style

Recipe for Worlds Best Santa Maria Style BBQ Tri-tip - Java Moto Style

        Ingredients:

  • 1 Tri-Tip - about 4 lbs
  • McCormicks GrillMates Montreal Steak Seasoning - Bistecs Montreal (No MSG)
  • Chili Powder
  • Ground Red Chili Peppers

    Directions:

Start the preparations the night before the barbecue.  Trim the fat off the tri-tip.  Combine McCormicks Grill Mates Seasoning, chile powder, and ground red chili peppers in a bowl.  Use about 8 parts McCormicks Grill Mates to each part chili powder and ground red chili peppers.  Total seasoning of about 1/2 cup should be enough, adjust to taste and by size and quantities of tri-tips.  Rub the seasoning on the tri-tip, place in a large zip-lock bag, and refrigerate overnight.

Use red oak logs and when the fire is at the peak, place the tri-tips on the grill.  From the time you light the fire to the time you take the tri-tip off the grill, it's only about an hour.  Sear all sides of the meat, cook until rare, and pull off the grill.  Slice thinly across the grain.  If you're using a meat slicer, try setting #4.  The spicy seasonings give the tri-tip a great tangy flavor, without being too hot!  Serve with Salsa.

  • What's the best way to trim a tri-tip?
    Most Santa Maria Style BBQ chefs agree - trim the fat off the tri-tip before grilling.  This will allow the seasoning to penetrate the tri-tip.  A common tri-tip question is whether to grill the tri-tip fat side up or fat side down.  If you do leave the fat on, try starting the tri-tip fat side down for about 5 - 10 minutes to sear the tri-tip.  Turn it over, and sear the other side of the tri-tip.  You may want to turn it several times.
  • How long does it take to grill a tri-tip?
    The length of time to grill the tri-tip will vary by the size of the tri-tip and the fuel for cooking.  Lots of people are asking about this so they can plan their barbecue events.  For the recipe on this page, I timed the chef from the minute he lit his fire to the minute he took the tri-tip off the grill.  The entire time from start to finish was slightly under an hour.  Santa Maria style cooking varies a bit with the chef.  Some like to sear the meat on all sides quickly and then raise the grill and let it slowly complete cooking.  This will take longer.  So as a suggestion, allow yourself no less than one hour, and see how that works for your grill and fuel.  You'll probably have to experiment with this.  Wind may also be a factor.  You might need to cover your grill to keep the heat in.  If you have a restaurant supply store handy, you may be able to purchase a couple of serving tray lids, the kind you see on a buffet line.  You can use your tongs to open one side of the lid and keep the other side closed. 
  • How should the tri-tip be sliced?
    The tri-tip will be more tender if you slice it across the grain. 
  • How much does a tri-tip weigh?
    Tri-tip usually weighs between 2 1/2 pounds and 4 pounds.
